In today's world there are so may preservatives, emulsifiers, and artificial sweeteners added to the ice cream we buy at the store. The only way to really be sure that you are eating healthy ice cream is to make your own.

It is really easy to do when you have the right recipe. Here is a healthy, easy recipe we want to share with you that we found at www.naturalblaze.com.

Healthy Homemade Ice Cream

* 3 egg yolks
* 1/2 cup maple syrup
* 1 tablespoon vanilla extract
* 1 tablespoon arrowroot
* 3 cups full fat organic coconut milk

Beat egg yolks and blend in remaining ingredients. Pour into an ice cream maker and process according to instructions. (Remember to choose the highest quality ingredients you can find like eggs from pastured chickens, or at least organic eggs, and organic (grade B, if you can find it) maple syrup. Pure vanilla extract and arrowroot powder or flour can be found in most health food stores.)

If you can't find full fat organic coconut milk or one without additives, make your own: * 3/4 cup of organic finely shredded unsweetned dried coconut * 1.25 cups just boiled water 1. Place coconut into the large cup of a Magic Bullet or bottom of a Blender. 2. Add freshly boiled, very hot water to coconut. 3. Blend on high for up to 5 minutes (with the magic bullet, you may have to do it in 1 minute increments to give the motor a few second break, and then repeat). 4. Pour pulp into a Nut-Milk Bag or Cheesecloth (or other chosen strainer) suspended over a glass bowl, mason jar, or measuring cup (have your strainer suspended over your bowl before you pour in the pulp). 5. You can either let gravity do its thing or you can squeeze the pulp through your bag or cheesecloth to release to coconut milk (better to wait for the pulp to cool a little before doing this). 6. If not being used immediately, store coconut milk in a glass jar in the fridge (the jar is great for shaking up later).
